Smoked Gouda Macaroni and Cheese
1 slice whole wheat bread
1 Tbsp butter
¼ cup sliced green onions
2 garlic cloves, minced
2 Tbsp flour
2 cups skim milk
½ tsp salt
½ tsp black pepper
½ cup shredded smoked Gouda (2 oz)
1/3 cup grated Parmesan (1.5 oz)
5 cups coarsely chopped fresh spinach
4 cups hot cooked macaroni (2 cups uncooked)
Preheat oven to 350
Place bread in a food processor, and pulse until crumbs
measure about ½ cup
Melt butter in large saucepan over medium heat. Add onions
and garlic, cook 1 minute. Add flour and cook 1 minute, stirring constantly.
Gradually add milk, salt and pepper, stirring constantly with a whisk until
blended. Bring to a boil, cook until thick (about 2 minutes). Add cheese; stir
until melted.
Add spinach and macaroni to cheese sauce, stirring until
well blended. Spoon mixture into a 2 quart baking dish coasted with cooking
spray. Sprinkle with bread crumbs. Bake at 360 for 15 minutes or until bubbly.
Serves 4
Was doing a cleanup of the computer and stumbled upon this recipe that I haven't made in a very long time. PK complained about the green stuff every time I made it so I stopped. Might be time to try it again seeing as he is quite happily eating the green stuff as pesto pasta these days. Perhaps I'll try replacing the bread crumbs with some ground seeds for some extra goodness.
